When the Lodge is short-staffed for whatever reason, menu choices for each meal will be limited to two or three items, and Ollie will act as waiter.
REMEMBER – Avoid overcooking anything on the griddle or in a frying pan – FIRE may result!
Breakfast:
Guests may order French Toast, an Omelette, and/or Canadian Bacon
French Toast and Canadian Bacon should be cooked on the griddle; Omelettes should be cooked in a frying pan
Make sure all food is thoroughly cooked before removing from the griddle or pan; French Toast and Omelettes should be golden brown, while Canadian Bacon should be lightly browned
When making an Omelette, simply add extra ingredients to the pan of egg mixture
FOLD the Omelette over AFTER any extra ingredients have been added
Lunch:
Guests may order Hamburgers and/or a Quesadilla
Cook Hamburger patties on the griddle, and remove them from the griddle when they are dark brown to insure that they’ve been thoroughly cooked
Put the cooked Hamburger patty on the bun FIRST, then add any extra ingredients
When making a Quesadilla, put the tortilla (into which cheese has already been folded) in a frying pan, NEVER on the griddle
Remove the Quesadilla from the pan when it has been lightly browned
Dinner:
Guests may order Salmon and/or a Salad
Cook Salmon on the griddle and remove when it turns a bright orange-pink
Put extra Salad ingredients in the Salad bowl on TOP of the lettuce
ALL Salads are to be topped with the Lodge’s famous Icicle Creek Ranch Dressing
